SSL’S Gluten-free Top Picks of the Week: Simple Lunch Menu

Hey, y’all! Welcome back to Sweet Sorghum Living. Today on the blog, we are chatting about one of my favorite go-to lunches. It is super easy + packable for school or work. Now let’s sit a spell with a good cup of coffee and look at my easy, gluten-free lunch menu. P.S. I thought I would get better at snapping pics with my Samsung Galaxy S5, but…it is much harder than those fancy food blogs make it look! Kudos to those photographers!

I really like Glutenfreeda products. The name is fabulous, and the quality is great and consistent. The best thing is all of their items are manufactured in a dedicated gluten-free facility, which is very, very important for those of us dealing with Celiac Disease.

I have tried other gluten-free, microwavable burritos, but Glutenfreeda Gluten-Free Burrito Chicken & Cheese is my favorite for three reasons:

1. It is made from all-natural ingredients and GMO free corn.

2. It has only 28g of carbs and 2g of fiber–which means I bolus less for it than the others on the market. Some of the burritos out there have 50+ grams of carbohydrates. As a person living with Type 1 Diabetes, I choose my carbs carefully! And I’m not wasting my carb allowance on a microwavable burrito!

3. It doesn’t “explode” like some of the others. Heating a burrito in the microwave isn’t as easy as the instructions make it sound. I’ve learned to dampen the paper towel before wrapping the burrito in it. It doesn’t guarantee that the paper towel won’t stick, but it helps! I also sprinkle salt on the paper towel before swaddling the burrito…Speaking of salt…

Since being diagnosed with Celiac Disease, I’ve made it my mission to replace everything in my pantry and fridge with certified, gluten-free products. Getting “glutened” is no fun, so I do everything I possibly can to prevent it…to avoid cross-contamination.

I recently discovered Himala Salt at The Fresh Market in Johnson City. I was pretty excited because I’ve had trouble finding certified, GF salt and spices in my new town. What is so grand about this brand is it is NONGMO verified, Kosher, powered by 100% renewable energy and organic.

I wanted to say a big thank you for reading, pinning, tweeting, and sharing my blog and especially the gluten-free top picks. Y’all have inspired me to be healthier and research more. I want to share what I find and try with y’all so y’all don’t have to spend countless hours hunting for quality gluten-free foods. Keep in mind what doesn’t bother me might bother you, so always read labels. I will do my best to include photos of the nutritional information of each item I chat about.

It has not been easy or cheap living healthier, but it has been totally worth it because I feel so much better + I’ve lost weight. I want to learn as much as possible about the foods I buy, eat and feed my family because they deserve to eat the way I did when I was a kid.

I grew up on a hobby farm where the eggs came from the chickens residing  in the backyard and the beef was homegrown. We grew our own veggies and had fresh milk. It wasn’t until I was in my teens that I had processed junk food and boxed dinners like Hamburger Helper. Life was hectic. My parents needed faster solutions to meals. Bless! They trusted the food they were buying. At that time, fast food restaurants were on the rise. Popular. Cool. Farming was frowned upon and hobby farmers were labeled as poor country folks not cool enough to buy Little Debbie.

The lunch my mom packed for me in elementary got me made fun of…now it’s the cool thing to have organic, all natural, locally sourced food in your eco-friendly lunchbox. Funny how time changes things…

I’m glad…proud to be returning to my roots…and I look forward to not only supporting local farmers more, but also growing some of my own veggies. I’m glad my parents grew our food, and my mom packed me lunches that got me ostracized…I learned so much from those experiences…and I hope to pass along what I’ve gained to all of you *smile*

Hey, y’all! Welcome back to Sweet Sorghum Living. Today on the blog, we are chatting about SSL’s gluten-free top picks of the week + my 20th anniversary getaway to Asheville. It’s not easy to surprise me, and it’s certainly difficult to plan a surprise picnic for a person with Celiac and Type 1 Diabetes…but my sweet hubby planned and accomplished the impossible *wink*

The hubby packed delicious fruit, cheeses, crackers, and wine all sans gluten. We had a picnic brunch at The Botanical Gardens at Asheville on a flat rock in the creek. It was peaceful and gorgeous + sweet and romantic *smile*

After our picnic, we walked and enjoyed the beautiful scenery surrounding us. I cannot wait to go back this fall when the foliage is in full show!

All this talk about my anniversary has me tearing up because the hubby really is the best. He loves surprising me + he takes time to research and read labels for me *smile* He also loves to make me laugh, and he is rarely serious…except when it comes to saving money, playing any kind of game, traffic and anything work related *haha*

SSL’S Gluten-free Top Picks: On-the-go Breakfast

Hey, y’all! Welcome back to Sweet Sorghum Living. Today on the blog, we are chatting about SSL’s top gluten-free picks of the week–which are all about making breakfast gluten-free, easy, and healthy. Now, grab a good cup of coffee or nice glass of wine and sit a spell with me.

If y’all are like me, there is little time for a fancy breakfast. I’ve tried making the casserole the night before, popping it in the oven the next morning, and cooking it while getting dressed. Yes, dancing around the kitchen with birds chirping outside…serving my family a delcious, homemade breakfast dish made with wholesome ingredients and love.  Haha! Not in this lifetime *wink* Yes, I tried the cooking while getting dressed breakfast ideas…let me just say that we ate cereal instead of a fancy casserole.

My favorite go-to breakfast item is Pamela’s Whenever Bars.  They are super delicious, gluten-free, and non-dairy with 150 mg of OMEGA 3 Fatty Acids and a good source of fiber. Most contain gluten-free oats, coconut,  eggs, and almonds–so, if you are sensitive to these ingredients, you might want to avoid the snack bars. My personal favorite is the Oat Blueberry Lemon…yummy for the tummy! I keep a nice variety of these in a basket in my snack drawer. Easy to grab and go.

Who wants muffins for breakfast? Well, ginnybakes has the perfect gluten-free muffin mix. All you need is the mix, one egg, butter, Greek yogurt, and flavoring of your choice (like vanilla). The ingredients are simple and preparation is fast. I usually bake mine the night before because I’m not a morning person…and cooking is not what I want to be doing at the crack of dawn!

The “peace love & crumble” muffin mix is certified gluten-free and kosher. It contains organic shredded coconut, organic dried apples, and organic Medjool dates. I give ginnybakes muffins five stars *smile*

Cookies for breakfast?!? Absolutely!! The “coconut oatmeal bliss” cookie mix by ginnybakes is not only easy to make, but also healthy and hardy enough to eat for breakfast. Make the cookies the night before, pop one in the microwave for about ten seconds, and pour yourself a glass of milk or cup of coffee for a quick breakfast that makes you feel like a kid again + the kids will think you’re the greatest for giving them cookies for breakfast!

A great on-the-go breakfast is trail mix. I make my own because of all my crazy diet restrictions + it’s fun *smile* My best advice is to read the ingredients of everything carefully. If you are adding dried fruit(s), check for added wheat or gluten. See examples below.

Just read those labels carefully and give yourself extra time to shop so you can read labels and ask questions. It’s your health…your life…don’t take chances or make guesses *smile*

Once I’ve mixed up my trail mix, I put it in either sandwich bags (because I can never remember to buy the snack size) or cute containers.  Those are then placed in my trail mix/snack food drawer. Yes, I’m that dedicated to my trail mixes and on-the-go snacks *wink*

A Real Life Post about Diet Pepsi, Blah Spaces, and Dog Food

Hey, y’all! It is time to sit a spell and relax with a good cup of coffee or a nice glass of wine. To be honest, I am drinking Diet Pepsi and eating watermelon as I write this…so feel free to pour yourself a diet beverage…if you are against artificial sweeteners…might I recommend La Croix Peach-Pear…it has no calories, no artificial sweeteners, and is sodium free. I just needed some caffeine…and I really like Diet Pepsi…there are so many things I cannot drink and eat because of the Type 1 Diabetes and Celiac Disease that it is perfectly acceptable that I am allowed to drink my Diet Pepsi without a sermon, friendly advice, or a disapproving look…believe me…I have read all the Facebook posts about the dangers of artificial sweeteners…but just let me have my Diet Pepsi without making me feel bad about myself and my beverage choice.  I digress.

Today on the blog, we are going to be chatting about Mattie and her new dog food, Ziva and her new food/beverage area, and my boring yet functional utility room and mudroom.
